Cooking for two can be somewhat challenging in portion sizes, but this saves really well! I never like baked goods that turn dry the next day, but if you just store this in a container with a lid in the refrigerator it will taste amazing!
I am a huge carb lover! My favorite type of breakfast would be coffee and a skinny vanilla late from Starbucks :) YUM! Anyways, well enjoy this indulgence totally worth the calories and effort baking it!
Ingredients:
1 cup butter, softened
2 cup sugar
2 tsp. vanilla
4 eggs
3 cups flour
1 tsp. baking soda
1 tsp. salt
2 cups sour cream
Topping:
1/2 cup sugar
1 1/2 tbsp. cinnamon
1/3 cup chopped nuts (optional)
1. Preheat oven to 350 degrees and grease a 9 x 13 baking pan.
2. Cream butter and sugar until fluffy. Then add vanilla then eggs one at a time and beating well after each addition. Combine dry ingredients and add with sour cream and mix just enough to keep smooth.
3. Spread half of the batter in pan then add half of the topping and repeat.
4. Bake for about 40-50 minutes or until the center is cooked. (you can tell by inserting a knife, which should come out clean!)
This is truly the best coffee cake EVER!!!
