Carmelitas

 

This is a recipe from my amazing mother, who by the way I miss like crazy! Anyways, she always made these growing up and it is something that I bake regularly in my house. My husband loves these so much that he always begs me to bring them to anything we go to! :) These are so so easy to make, yet taste like they took you hours upon hours to make! The key is not to over bake them, which keeps them gooey, chewy, and moist. Ok so enough talk and start baking!

Ingredients:
2 sticks butter, softened
3/4 cup brown sugar, packed
1 cups flour
1/2 tsp. baking soda
1/4 tsp. salt
1 cup quick cooking oats
1 cup milk chocolate chips
1/2 cup chopped nuts (optional)
1/2 cup of caramel (I just use the smuckers caramel)

1. Preheat oven to 350 degrees. Grease 9 by 13 baking dish.
2. With a mixer, beat butter and sugars until well combined on medium speed. Then add flour, baking soda, salt, and oats in and mix until combined.
3. Take half of the oatmeal mixture and press evenly in the baking dish. Bake for about 8-10 minutes depending on the temperature of your oven. Heat caramel in saucepan until bubbles, which should only take about 3 minutes.
4. Once crust is done pour heated caramel over it, then sprinkle chocolate chips and nuts evenly over crust and caramel. Top by sprinkling with the other half of oatmeal mixture.
5. Bake for about 15 minutes and cool for about 1-2 hrs. or so. ENJOY and INDULGE in this yummy yummy dessert!! :)
